If I were to leave this life and had one last meal request, it would be lentil soup. The often lesser-loved member of the legume family, lentils are packed with nutrition, including protein, iron, fiber, and seven important minerals. They’re quick and easy to prepare and absorb flavors from other foods and seasonings, so their versatility makes them a great meatless alternative. Plus, they’re delicious! When I’m training, I restrict beans because they can cause GI distress. Lentils are much easier to digest (at least for me), so I have them regularly.
Tip: I buy dried beans, lentils, rice, and most spices from an Indian grocery store. They’re usually sold in large quantities and are much cheaper than those in regular grocery stores.

Lentils and Rice with Caramelized Onions (Mujadarrah)
Middle Eastern restaurants call this Mujadarrah, but it’s pretty much just lentils, rice (I use brown) and caramelized onions with some spices. I usually make cumin-spiced pita chips to go with it (included in the recipe link). I sometimes make this into a soup by cooking the lentils in veg broth with the spices, then adding caramelized onions and brown rice at the end. Because, you know, I can’t have enough lentil soup! Spicy Chipotle Lentil Dip

This doesn’t need a recipe because it’s so simple. This is one of those dishes I make when I have cooked lentils on hand and want dinner in less than five minutes. All you do is mash up cooked lentils with taco seasoning and then use it just like you would seasoned meat in tortillas with your favorite toppings. I also make burritos out of these.
